Leftovers add up to great smoothies

My favorite childhood story was Stone Soup. Something I never thought much about until recently, while hunting through the fridge for edible objects to add to the turkey broth I just made from a previous dinner's remains. It is how I cook -- start with a winning base and build. My freezer is always stocked with quarts of broth and bananas!

I am also a re-use artist -- someone who takes junk and (hopefully) turns it into something usable and practical. Even better is when an object can be used for many different things. It's the same with food. For instance, there is the scant cup of leftover coffee that nobody wants. I can use it for iced coffee. So, why not take it a step further and use it to make a great smoothie with soy protein powder?

Try this Mocha (Latte) Smoothie:

  • 1 cup cold coffee
  • 1 frozen banana, coarsely chopped
  • 1 scoop FoodScience Soy Protein Powder/creamy chocolate for mocha smoothie

    or

  • 1 scoop of FoodScience Soy Protein Powder/creamy vanilla for a latte smoothie
  • Optional -- additional sweetener, creamer or milk to taste -- whatever you like in iced coffee

Mix in blender. If you don't have a whole cup of leftover coffee, you can top it off with milk.

We eat a lot of fresh fruit and usually have cut up cantaloupe in the fridge. Here is another great way to get protein, fruit and calcium in one glass.

Cantaloupe Smoothie

  • 1 cup reduced fat milk
  • 1 frozen banana, coarsely chopped
  • 1/4 to 1/2 cup of cut up cantaloupe
